Kale is just about the healthiest leafy green vegetable you will ever eat and is readily available most of the year although it is actually sweeter when grown in temperatures cold enough to produce a light frost. Seasonally it is best from mid-winter through the beginning of spring. It has an earthy flavor along with a high nutritional value which is nearly unsurpassed by just about any food. It does all of this with a very minimal amount of calories.
Besides lowering cholesterol with every bite, kale is one of the best cancer fighters around and actually has extremely potent detox properties at a genetic level. There have been over 45 different flavanoids identified in this super food which provide a one-two punch of antioxidant and anti-inflammatory benefits. In short, kale is head and shoulders above just about any other known food in the areas of anti-oxidant, anti-inflammatory, and anti-cancer nutrients.
Kale belongs to the Brassica family, which consists of a group of vegetables such as cabbage, collard greens, Brussels sprouts and broccoli.
